With Spring’s arrival comes fresh, colorful vegetables. How is it possible to have fresh, local veggies with such weather swings impacting the US? We thank our dedicated local farmers who use row covers and mulch to help their spring crops grow…and lucky for us many also have greenhouses!!
Without further a due, one of our favorite veggies to make an appearance is rainbow chard! This colorful vegetable is packed with nutrients like vitamins K, C, iron and potassium. Try using it anywhere you would use spinach. Add rainbow chard to smoothies, soups, stir-fries or in pasta dishes.
